The champagne biscuit was created in the French Court during the reign of Catherine de Medicis. Its inspiration came from a pink biscuit typical of the city of Reims, in the region of Champagne, that used to be dipped in the champagne. Montevergine has had the biscuit on the line for years and those who can not afford to go unused in their recipes!
